Don't waste you time with a driving school; they are mostly BS.
But if money is not a first concern, with a school car for the novice, it can be expected to be properly set-up and balanced, both good attributes to get one hooked on the sport, and to give one a decent benchmark for one to seek with their own car/setup later on, plus any other like cars on the track are likely not blowing your doors off. I feel early in the learning process, this is useful to allow the student to focus on other basics. My school experience was driving Panoz at Sebring, and I found it enjoyable and fun, but the classroom is really for soccer moms?

Mentioned elsewhere, IMO every driver, including non racers should be required to have adequate seat time in a go kart, to get basic car control skills.
