Wondering if anyone with a similar car has had theirs on a scale.

Your local quarry, grain elevator, scrap yard, or a manufacturing plant is usually good for this. They will have large scales for weighing trucks before they leave the site. Most won't charge you a thing to get a quick weight.
While you're at it, make sure you get a front weight as well as a total weight. It doesn't sound like you are doing any road course racing so you shouldn't be too concerned with cross weights. If you really want to get specific then chat up your buddies who race circle track, somebody will have a set of scales that you can use or at that point you might buy your own set, the prices have come down...some.

I will guess 3290 w/o the driver.
Here is a link to the NHRA car classification guide. Go to Oldsmobile, then 1966. An Excel file will open that shows a power to weight factor of about 10.46 for the 310 HP engine in the Cutlas 2 Dr Hardtop Coupe.
