What temps are "normal" for a welltuned meth engine running a slight bit on the rich "safe" side? I know EGT's are not the say-all, just curious as I haven't worked with it. Yet.

If the thermocouple is located within 1 inch of the flange, and the probe extends into or through the center of flow, 1140-1190 is good for many applications.
In my experience, temps hotter than this generally do not see gains, and tend to start dropping off. YMMV
Remember that alcohols tend to run fine rich (as compared to gasoline based fuels) but do not perform well lean - except at part throttle loads.

FYI i found out today that Haltech have a methanol AFR meter with a wideband sensor that reads between 7.7 and 2.9afr. It's not quite on the market yet though. Looks like another month or so..
AFR's i've been very reliably told are best at between 3.)or lower)and 3.8 on boost..
I've also found an injector that will flow 3300cc at 100psi and doesn't break the bank..

There are way too many variables on egt's to say that as a blanket statement. I've seen many alcohol cars slow down anytime they get above 1250. Header material, wall thickness, coated or not, dragster (headers out in the open air) door car (headers under the hood) location of the egt probe, ENGINE COMPRESSION RATIO, etc. all have an effect on the egt reading. I usually tell racers to ignore the egt. (within reason) and tune the car for MPH, once you are satisfied with the performance, take an egt reading and use that for a reference in the future.
