I ruined a perfectly good street 496 by doing a short fill and honing it another .010. Went from 170-180 degree temps to 210+. I added an oil cooler and it didn't help much and I started seeing bearing wear. Now I have a Dart block 555.

I wouldn't do it. I did a short fill on my old 496 BBC when I freshened it. Honed it .010 larger. The engine which previously ran 160-170 degrees would run at a minimum of 180 and frequently over 200 even with an oil cooler. Why no tall deck? If you aren't married to a set of headers, less than 1/2" deck height increase won't make any difference. If I was in your shoes, I would look at the blueprint engines 632.

1st install a lockup TCI Super Street Fighter converter. Honestly, that should seriously drop your 60' and make it more fun to drive. If you want more after that, go with a deeper rear gear.
