After you have the engine all clean and you're done with the pressure washer, turn the burner off and hit it with cold water. This damage was on the rocker side correct?
I'd take an extremely close look at all the rocker cups and put a good set of pushrods in it and let it go another week then more close examinations.

Always assume any stroker setup is going to need clearancing until you have personally verified it yourself

Any AN style hone would work fine. For a number of years we had a manual stroke Axe machine.
Your only adaptation you'll need will be to trim the bottom of the stone head flush to the stones so you can get all the way to the bottom of the bores.

We bore and sleeve a lot of marine engines and are also located in missouri! Whatever you get, make sure you get the blind hole tooling so you can bore all the way to the bottom. There are plenty of variants of the Gen 1 SBC that will take some horsepower and RPM. None of them are stock production car pieces.
